Rooted in centuries of craft, Irish whiskey is one of the world’s oldest distilled spirits, known for its smooth character and triple-distillation tradition. From monastic beginnings to global revival, each pour tells a story of resilience, innovation, and enduring pride. We’ll enjoy special pours and share a proper toast. about the presenter:

Neasán Guilfoyle is an Irish Whiskey Brand Ambassador for Pernod Ricard, originally from Midleton, Co. Cork, the home of Jameson Irish Whiskey. With six years in the Irish whiskey industry spanning three continents, including building the Jameson brand in India and spending the last two years in San Diego, he is an expert in the full range of whiskeys produced at Midleton Distillery, from Jameson to Redbreast to Midleton Very Rare. Neásan brings authentic expertise and infectious passion to every pour.

Irish whiskey is legally defined and protected under both Irish law and EU geographical indication regulations. To be labeled Irish whiskey, the spirit must be:

  • Produced and distilled on the island of Ireland (Republic of Ireland or Northern Ireland).

  • Made from a mash of cereal grains that is fermented by yeast and distilled to an alcohol strength of less than 94.8% ABV, so the distillate retains the flavor of the raw materials.

  • Aged for a minimum of three years in wooden casks not exceeding 700 liters in capacity.

  • Matured on the island of Ireland for the entire aging period.

  • Bottled at no less than 40% ABV.

These rules are codified under the Irish Whiskey Technical File, which governs all recognized styles—such as Single Malt, Single Pot Still, Single Grain, and Blended Irish Whiskey—and protects the category internationally.
